I have a great surplus of mangoes and a pot still, but am unclear the correct ingredients and quantities to make a good german style schnapps (not liquer). Any assistance greatly appreciated.

AS far as I know, you just take the fruit you have, and bust it up (run it through a meat grinder, food processor, etc.), add sugar (as to how much, I don't know. You'd have to research that. It's different for different fruits), and then seal it it (with an airlock preferably, but a loose-ish lid will do, I suppose). Leave for two days, open and stir, then let sit for three weeks or so. Then run it through your still, preferably with all the lumps filtered out.
Take into consideration, however, that this is the knowledge of a rather inexperienced amateur, and additional research ought to be conducted before making your mango mash.
